#64: DONE!

Purchase the book that David and I talked about purchasing...DONE! I still don't want to reveal the book but I will tell you that our new found friend, Dr. Laura Berman, recommended it to us...

#50: In Progress...

2 new recipes a month for the duration of the 101 in 1001 project. I believe I've made 3 new recipes (probably more) since the start of the project.

New Recipe #1: Anja's BBQ Chicken Success!

Now let's just remember who you are talking to here! Anja's BBQ chicken will forever be named that! Anja and Drew have 7 beautiful children and this recipe is one that all of their kiddos enjoy and is SUPER easy.

1 package of chicken breasts
BBQ sauce (I usually do a bbq sauce/grape jelly combo)

Throw your chicken breasts in the crockpot-no need to thaw. Cook in the crockpot until cooked through. Add bbq sauce and cook however much longer you feel like cooking it!

New Recipe #2: Chicken Enchilada Soup SUCCESS! (I think?)

I made this recipe for my neighbors who had their beautiful baby girl, Sophia. I didn't taste any of it..but I think it was a success...

1 pound of shredded chicken
2 cans of Enchilada Sauce
2 cans of Fiesta Nacho Cheese Soup (because I wasn't sure if Jen was nursing or not, I used 1 can of Fiesta Nacho cheese Soup and 1 can of Cheddar Soup)
1 can of milk

Cook the chicken (I used 1/2 of the bag of chicken I used for the BBQ chicken)
Shred the chicken
Combine chicken, enchilada sauce, soup, and milk
Cook in the crockpot about 2-4 hours on high or 6-8 on low.

Serve with tortilla chips

New Recipe #3: Italian Meatlof....FAIL

This was such a FAIL! The meatloaf wasn't cooked all the way through. I am totally obsessive about cooked meat that once I saw that pink meat, I wanted NOTHING to do with it. Poor David had to eat the whole thing himself. Advice from friends: Use muffin tins!

2 pounds of hamburger or turkey
1 cup of Italian Style bread crumbs
1 8 oz can of tomato sauce
1 cup chopped onion
1/2 cup chopped green pepper
1 egg
1 tsp basil, optional

Pre-heat oven to 350 degrees
Combine all ingredients.
Put in loaf pan (or muffin tins)

Bake at 350 for 45 mins.
Drain.
Cook additional 10 minutes.
Sprinkle with Parmesan cheese before serving, optional.

32 sure hasn't been a good year for me. I cannot wait to turn 33. Only 56 more days!
